Buffalo Cauliflower Wings

1 small head of cauliflower, cut into 1 inch florets
¼ cup soy, coconut, or almond milk
¼ cup lager
1 cup flour (all purpose or garbanzo for gluten free)
½ tsp garlic powder
½ tsp onion powder
½ cup Franks Hot Sauce
2 tbsp vegan butter substitute (Earth Balance is great!)
Non-stick cooking spray

Preheat oven to 450. Line a baking sheet with parchment paper or foil. Combine lager, milk, flour, garlic & onion powder. Dip each floret into mixture until coated and place on lined sheet. Spray florets with cooking oil, this will make them extra crispy. Bake for 25 minutes, or until golden. In the meantime, combine hot sauce and butter over medium heat. Drizzle florets with mixture, just until covered. Return to oven for about 5-7 minutes. Remove from oven and toss with remaining sauce. Serve immediately with celery sticks and vegan ranch or bleu cheese.

Vegan Ranch Dressing
1 cup vegan mayonnaise
½ cup vegan milk, unsweetened
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
1 tsp dried parsley

Wisk all ingredients until combined and chill until ready to serve.
